Bob’s Bourbon Smoked Paprika Chicken

- 4 chicken thighs or breasts
- 2 tbls Bourbon Smoked Paprika
- 1 tbls Aleppo Chili
- 1 tbls Calaveras Chicken Rub
- 1 – 2 tbls oil
Mix spices together. Coat chicken with spice blend. Cover and refrigerate for an hour. Pour 1 inch of oil into skillet and heat to 350°. Add the chicken pieces to the hot oil, being sure not to crowd the skillet. Fry over moderate heat until the chicken is golden, crisp and cooked through, 20 to 25 minutes; an instant-read thermometer should register 165° for thighs or drumsticks and 160° for breasts. Remove chicken from pan. Add 1 – 3 tbls wine, broth, water to pan. Stir over medium heat for a few minutes to make a sauce from juices in pan.
