Deviled Eggs Mole Style
This is a fun variation of standard deviled eggs.
8 hard boiled eggs, peeled and cut in half
2 -3 Tablespoons mayonnaise
1 teaspoon Entube Mole (mole paste in a handy tube for quick and easy flavor)
1/4 cup cilantro chopped in small pieces
1/2 cup avocado diced
1/4 cup green onion chopped
Separate egg yolks, saving the whites in tact
Mix all above ingredients except the whiles in bowl. Spoon mixture back into the halved whites. Since the color will be brown, use cilantro and sprinkles of chili flakes or chili threads to brighten it. If you like heat, top with a slice of picked jalapeno. Not so into heat, top with slice of pimento pepper.
