South of the Border
It is not a surprise to most of you that Jan and I love to travel, love the adventure and the challenges of learning about a culture through their culinary traditions. But when we “vacation”, our favorite spot is Nuevo Vallarta. Vacation to us is shrimp everyday, reading under a palapa with the beauty and sounds of the ocean just steps from our lounges, cerveza of course and the warmth and hospitality of Mexicans. One of my favorite menu selection is shrimp cocktail, large, sweet shrimp with avocado, cilantro, onion floating in a delicious tomato broth.
Murphys is preparing for Dia de los Muertos. Since we were just in Nuevo Vallarta, we were treated to a demonstration of the cultural meaning of this holiday which celebrates our loved ones who have passed. The Spice Tin’s offrenda, will again honor Chef Peter Speno of If Refugio pesto fame. Marigolds, water, wine, favorite foods and possessions will be arranged on this altar, all of which have important meanings. For instance, marigolds are said to guide the souls to their altars with their bright colors and strong scent. Below are a few photos from last years offrenda.
Easy Mole Chicken – If you do not have a whole day to play in the kitchen to make the traditional mole sauce, this is the recipe for you.
Mole Deviled Eggs – This is a fun variation of standard deviled eggs.
New At The Tin
Funny name for a delicious, “herbie” pesto. Herbs Against Stupidity is one of Chef Essendorfers products direct from Bavaria. The chef created the pesto after an argument with a friend and a long hike during which he picked calming herbs to create this “Lets make up” spread. Herbs Against Stupidity joins Luciano Fabioso Pesto, Garlic Onion Roaster and Wold Cranberry Horseradish, all imported from Bavaria.
