
Annatto Rice & Sausage

Ingredients
2 cups Long Grain White Rice
2 cups Chicken Broth
2 cups Water
1 tsp Ground Annatto Seed
2 tbsp Olive Oil
1/2 Yellow Onion
2 Garlic Cloves Minced
12 oz Andouille Smoked Sausage, sliced into bite size
1 Red Bell Pepper
1 Green Bell Pepper
1/2 cup Frozen Corn
1 cup Chopped Tomato
1/2 tsp Mexican Oregano
Salt & Pepper to taste
Instructions
Step One: Cook rice in a rice cooker with chicken broth, water, ground annatto seeds
Step Two: Heat olive oil and saute onion and garlic on medium to low heat. Once onions are translucent turn the burner to medium-high heat and add Andouille Smoked Sausage, bell peppers, corn, tomato and Mexican Oregano. Cook until the sausage is thoroughly cooked.
Step Three: Add the cooked rice to the sausage saute
Step Four: Add salt and pepper
Step Five: Sever warm and enjoy! 😋
