Basic Dukkah Recipe

Basic Ingredients

  • Nuts – hazelnuts, almonds, pistachios, cashews, pine nuts, macadamia nuts
  • Sesame seeds
  • Coriander
  • Cumin

Optional Additions

Basic Ingredients

  • Dried chickpeas
  • Dried herbs – Italian Blend, mint, thyme
  • Dried lemon, orange
  • Hot pepper – red pepper flakes, chili powder
  • Seeds – caraway, fennel, grains of paradise, nigella
  • Spices – cinnamon, clove, turmeric, zhug
  • Salt, pepper, sugar

Measurements:

Basic Ingredients

  • 1 cup nuts
  • 1/2 cup coriander seeds
  • 1/4 cup cumin seeds
  • 1 teaspoon sea salt
  • Freshly ground black pepper

In a large frying pan combine nuts and whole spice over medium-high heat. When the mix has started to colour, add the sesame seeds and continue to toast until golden brown. Pour the mixture into a food processor. Season with salt and pepper. Store in the refrigerator in an air-tight container. Makes 2 1/4 cups
