- Dried lemon, orange
- Hot pepper – red pepper flakes, chili powder
- Seeds – caraway, fennel, grains of paradise, nigella
- Spices – cinnamon, clove, turmeric, zhug
- Salt, pepper, sugar

- 1 cup nuts
- 1/2 cup coriander seeds
- 1/4 cup cumin seeds
- 1 teaspoon sea salt
- Freshly ground black pepper

In a large frying pan combine nuts and whole spice over medium-high heat. When the mix has started to colour, add the sesame seeds and continue to toast until golden brown. Pour the mixture into a food processor. Season with salt and pepper. Store in the refrigerator in an air-tight container. Makes 2 1/4 cups
