Easy Mole Chicken

If you do not have a whole day to create traditional mole sauce, this is for you!


6 Tablespoons Mole Blend

6 Tablespoons broth

1/4 cup pumpkin seeds

1/4 cup unsalted peanuts

1/4 cup raisins

4 chicken thighs


Toast pumpkin seeds, peanuts and raisins in medium hot skillet for 1 minute.  Watch carefully to not burn.

Put in processor and puree.

In saucepan warm broth, add mole blend.  Add seed and raisin mixture.  Stir over low heat, adding more broth if needed.  Sauce should be consistency of tomato sauce with lumps from the nuts and raisins.

Coat a skillet with oil, sear to brown chicken thighs.

Add mole mixture,  to skillet and cook chicken on low temperature for one hour or to 165 degrees Fahrenheit.

  1. I made the Easy Chicken Mole tonight and it was amazing! It was super easy, and didn’t even take a whole hour to cook. Thank you for a new way to cook chicken!
