Homemade Chai


Serves: 3-4 people
Prep Time: 30 min
Difficulty: Intermediate 
Cooking: 7 hours


  • 1 Tbsp anise seed
  • 6 green cardamom pods
  • 12 cloves
  • 1 cinnamon stick
  • 1/4 tsp dried ginger root or ¼ ginger root, sliced thin
  • 2 bay leaves
  • 7 cups water
  • 2 Tbsp Darjeeling tea (see Darcy @ Tea-N-Tiques)
  • 1 cup milk
  • 6 Tbsp honey, honey powder or brown sugar


  • · Boil the above spices for 5 minutes
  • · Steep for 10 minutes
  • · Add Darjeeling tea
  • · Bring to boil and simmer for 5 minutes
  • · Add honey powder and milk
  • · Sit down, relax and enjoy your delicious Chai

Save remaining Chai in the refrigerator to enjoy chilled or reheated.
