Eye of the Goat have a thin skin, releasing so much flavor into the bean broth and yet they are firm enough to hold their shape during cooking. Each bean, has velvety texture and full flavor.  There is not need to cook these in stock – just saute onion, carrot and celery, add -presoaked beans, a bay leaf or two, cover with water and cook for 6 – 10 hours.  

*Add oregano, and urfa chili.
